Buttermilk Fried Chicken

This crispy, flavorful fried chicken is marinated in buttermilk, which keeps it tender and juicy, while the Ethical Table Barbecue Blend adds a savory kick. Double-fried to perfection, this chicken is crispy on the outside and juicy on the inside!

Ingredients:

Marinated Chicken:

  • 500 - 750 ml buttermilk

  • 2 lb chicken thighs & drums

Batter Mix:

  • 1.5 cups “00” flour

  • 2 tbsp Ethical Table Barbecue Blend

Directions:

  1. Marinate the Chicken:

    • Place the chicken in a medium bowl or pot and cover entirely with buttermilk.

    • Cover the bowl and refrigerate for at least 4-5 hours (overnight is recommended for the best results).

  2. Rest the Chicken:

    • Remove the chicken from the fridge and let it rest on the counter for at least 30 minutes to bring it closer to room temperature.

  3. Prepare the Batter:

    • In a medium to large bowl, whisk together the “00” flour and Ethical Table Barbecue Blend.

  4. Coat the Chicken:

    • Using a fork, remove the chicken from the buttermilk, allowing any excess to drip off to prevent clumping in the batter.

    • Lightly toss each piece of chicken in the flour mixture until evenly coated, then place on a wire rack.

    • Let the coated chicken rest on the rack for up to 20 minutes.

  5. Heat the Oil:

    • Pour frying oil into a pot and heat it to 325°F (165°C).

  6. Blanch the Chicken:

    • Slowly add a couple of pieces of chicken at a time into the hot oil, ensuring they don't stick to the bottom or overcrowd the pot.

    • Blanch the chicken for approximately 5 minutes (depending on size).

  7. Cool the Chicken:

    • Remove the chicken from the oil and place it on a wire rack to cool for 20 minutes.

  8. Double-Fry for Crispiness:

    • Return the chicken to the hot oil in small batches (again, without overcrowding) and fry until golden brown and crispy.

    • Once crispy, remove the chicken from the oil and set it on a wire rack to drain excess oil.
