Maple Espresso Burger

These Maple Espresso Burger Patties, made with a blend of elk and boar, are paired with a smoky chipotle aioli and topped with caramelized onions for an unforgettable burger experience. Whether you're cooking on a frying pan or grill, these juicy, flavorful patties will make your taste buds sing!
Ingredients:
Burger Patties:
1 tbsp Ethical Table Maple Espresso Blend
1 lb ground beef (or substitute with game meats like elk or boar)
0.5 lb ground meat (elk, boar, or your choice)
Aioli:
1 cup mayo
1 chipotle pepper (or use chipotle in adobo sauce)
1 tsp gochujang paste
1/2 small lemon, squeezed
Caramelized Onions:
2 cups yellow onion, thinly sliced
1 tbsp unsalted butter
1/2 tsp salt
1/2 tsp pepper
Other Ingredients:
Lettuce or arugula
Sliced tomatoes
Brioche buns
Directions:
Prepare the Burger Patties:
In a large bowl, combine the ground beef (or game meats) and the maple espresso blend. Mix well to incorporate.
Gently fold in goat cheese into the meat mixture. Form the mixture into burger patties (as seen in the Reel).
Place the patties in the fridge to rest for at least 1 hour to help them firm up.
Caramelize the Onions:
In a saucepan, add the sliced yellow onions and butter.
Heat on medium-high until the onions start to color.
Add salt and pepper, then reduce the heat and simmer, stirring every 10 minutes. Let the onions cook until they are dark brown and caramelized (about 30-40 minutes).
Make the Aioli:
In a blender, combine the mayo, chipotle pepper, gochujang paste, and lemon juice.
Blend until smooth, and adjust seasoning if needed. You can also use a hand blender for a quick mix.
Prepare the Buns:
Slice the tomatoes and set aside.
Add a small amount of butter to each brioche bun and lightly sear them on a frying pan until golden brown.
Cook the Burger Patties:
Heat a frying pan or BBQ to medium-high heat.
Sear the burger patties on both sides until they are golden brown.
If using a frying pan, transfer the patties to a 400°F (200°C) oven to cook until the center reaches 160°F for a fully cooked patty.
Assemble the Burger:
Spread aioli on the bottom half of each bun.
Top with a layer of caramelized onions, followed by the burger patty.
Add sliced tomatoes and your choice of lettuce or arugula.
Place the top bun and enjoy!
