Canadian Seas Blini

Delicate and fluffy, these blinis are perfect as a base for luxurious toppings like Acadian Wild Sturgeon Caviar and Crème fraîche, seasoned with Canadian Seas and lemon zest for a touch of elegance. Serve them as an appetizer or at a special brunch!
Ingredients:
Dry Mix:
1 cup “00” flour
1.5 tsp Canadian Seas
1 heaping tsp baking powder
Wet Mix:
13 tbsp homogenized milk
1 large egg
1 tbsp melted unsalted butter
Crème Fraîche:
7 tbsp crème fraîche
1.5 tsp Canadian Seas
1 tsp lemon zest
Caviar & Garnish:
30g Acadian Wild Sturgeon Caviar
Fresh dill
Directions:
Prepare the Crème Fraîche:
In a small bowl, whisk together the crème fraîche, Canadian Seas, and lemon zest.
Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Make the Dry Mix:
In a small bowl, combine the “00” flour, Canadian Seas, and baking powder.
Whisk well to combine.
Make the Wet Mix:
In a separate bowl, whisk together the milk, melted butter, and egg until smooth.
Combine the Wet and Dry Mix:
Pour the wet mixture into the dry ingredients and whisk until smooth.
Let the batter sit for at least 15 minutes at room temperature (do not stir during this time).
Cook the Blinis:
Heat a non-stick frying pan or skillet over medium heat and add a small amount of butter.
Once the pan is hot, drop 1 tablespoon of batter at a time to form small circles.
Cook for about 2 minutes per side or until golden brown and cooked through.
Once cooked, transfer the blinis to a wire rack or plate to cool slightly.
Assemble and Serve:
Once the blinis are cooled, top each one with a dollop of the Crème fraîche mixture.
Add a small spoonful of caviar and garnish with fresh dill.
