Blini
(Dry Mix)
1 cup “00” flour
1.5 Tsp Canadian Seas
1 heaping Tsp baking powder
(Wet Mix)
13 Tbsp Homogenized Milk
1 Large Egg
1 Tbsp Melted Unsalted Butter
Crème fraîche
7 Tbsp Crème fraîche
1.5 Tsp Canadian Seas
1 Tsp Lemon Zest
Caviar & Garnish
30g Acadian Wild Sturgeon Caviar
Fresh Dill
Place Crème fraîche in a small bowl, whisking, and add Canadian Seas & lemon zest. Keep in refrigerator until ready to serve. Allow chilling for at least 30 mins in the fridge before serving.
Combine dry mix ingredients in a small bowl and whisk well.
Pour milk, melted butter and egg into a small mixing bowl and whisk until smooth.
Pour wet mix with dry and whisk until smooth. Let stand for at least 15 mins at room temperature without stirring.
Once your drying pan is heated to medium-hot, swirl butter on the pan, and quickly add one tablespoon of batter at a time. Cook for approximately 2 minutes per side or until golden brown.
Once the Blinis cool, place Crème fraîche, then finish with caviar and garnish with dill.
