Canadian Seas Blini

Delicate and fluffy, these blinis are perfect as a base for luxurious toppings like Acadian Wild Sturgeon Caviar and Crème fraîche, seasoned with Canadian Seas and lemon zest for a touch of elegance. Serve them as an appetizer or at a special brunch!

Ingredients:

Dry Mix:

  • 1 cup “00” flour

  • 1.5 tsp Canadian Seas

  • 1 heaping tsp baking powder

Wet Mix:

  • 13 tbsp homogenized milk

  • 1 large egg

  • 1 tbsp melted unsalted butter

Crème Fraîche:

  • 7 tbsp crème fraîche

  • 1.5 tsp Canadian Seas

  • 1 tsp lemon zest

Caviar & Garnish:

  • 30g Acadian Wild Sturgeon Caviar

  • Fresh dill

Directions:

  1. Prepare the Crème Fraîche:

    • In a small bowl, whisk together the crème fraîche, Canadian Seas, and lemon zest.

    • Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

  2. Make the Dry Mix:

    • In a small bowl, combine the “00” flour, Canadian Seas, and baking powder.

    • Whisk well to combine.

  3. Make the Wet Mix:

    • In a separate bowl, whisk together the milk, melted butter, and egg until smooth.

  4. Combine the Wet and Dry Mix:

    • Pour the wet mixture into the dry ingredients and whisk until smooth.

    • Let the batter sit for at least 15 minutes at room temperature (do not stir during this time).

  5. Cook the Blinis:

    • Heat a non-stick frying pan or skillet over medium heat and add a small amount of butter.

    • Once the pan is hot, drop 1 tablespoon of batter at a time to form small circles.

    • Cook for about 2 minutes per side or until golden brown and cooked through.

    • Once cooked, transfer the blinis to a wire rack or plate to cool slightly.

  6. Assemble and Serve:

    • Once the blinis are cooled, top each one with a dollop of the Crème fraîche mixture.

    • Add a small spoonful of caviar and garnish with fresh dill.
