Combine olive oil and BBQ seasoning and whisk until well incorporated.
Coat chicken thighs with marinade, place in a sealed container, and marinate for at least one hour. You can leave overnight for maximum flavour and best results.
Heat oven to 400F.
Seared fat side of chicken thigh until golden brown. Flip sear other side for 1 min, then place on a baking pan and bake in the oven for approx 30 min, depending on the size of the chicken thighs. If there is no bone, this will take less time. Cook until you reach 165-170F internally.
Once fully cooked, rest on a wire rack for 10 mins, then enjoy with your favourite sides!
